A crock pot healthy meal is the easiest healthy dinner there is: you load lean protein, beans and vegetables into the slow cooker in the morning, and dinner is ready when you get home. Slow cooking needs very little added fat, it turns cheaper cuts and dried pulses into tender meals, and it makes batch cooking almost effortless.
Every recipe below is a genuine crock pot healthy meal: about 250 to 450 calories per serving, and all but two pack 25 g of protein or more. The two lighter exceptions are the lentil soup (15 g of protein) and the overnight oats (11 g) — both still fill you up thanks to their fibre. Cook times are on LOW; add an hour or so if your slow cooker runs cool.
The 7 Crock Pot Healthy Meals
1. Slow Cooker Turkey Chili
Serves 8 · Cook time: 7–8 hours on LOW · Per serving: 340 calories, 31 g protein.
Brown 2 lb (900 g) of 93% lean ground turkey, then add 2 cans of kidney beans (about 4 cups), a 28 oz can of crushed tomatoes, one diced onion and two diced bell peppers, plus chili powder, cumin and garlic. Cook on LOW for 7–8 hours and top with a spoonful of Greek yogurt instead of sour cream.
The maths: the turkey gives the batch 1,360 calories and 168 g of protein, the beans add 880 calories and 56 g, the tomatoes 320 calories and 16 g, and the onion and peppers 160 calories and 8 g. That is a batch of 2,720 calories and 248 g of protein, divided by 8 servings = 340 calories and 31 g of protein per serving. It is the same chili maths as our guide to what to cook with ground turkey.
2. Chicken & White Bean Chili
Serves 6 · Cook time: 6–7 hours on LOW · Per serving: 312 calories, 42 g protein.
Add 1.5 lb (680 g) of chicken breasts, 2 cups of cooked white beans, 1 cup of corn, one diced onion, a can of green chiles and 2 cups of chicken broth, plus cumin and oregano. Cook on LOW for 6–7 hours, then shred the chicken with two forks and stir it back in. A squeeze of lime at the end lifts the whole pot.
The maths: chicken 1,122 calories and 211 g of protein, white beans 500 and 30 g, corn 130 and 4 g, onion, chiles and broth 120 and 4 g. Batch total 1,872 calories and 249 g of protein ÷ 6 servings = 312 calories and 42 g of protein per serving.
3. Beef & Vegetable Stew
Serves 6 · Cook time: 8 hours on LOW · Per serving: 382 calories, 43 g protein.
Combine 2 lb (900 g) of lean stewing beef, 450 g of diced potatoes, 200 g of sliced carrots, one onion, two celery stalks, 2 cups of beef broth and 2 tablespoons of tomato paste with thyme and a bay leaf. Cook on LOW for 8 hours, until the beef falls apart. No flour or thickener needed — the potatoes do that job.
The maths: beef 1,723 calories and 245 g of protein, potatoes 347 and 9 g, carrots 70 and 2 g, onion, celery, broth and tomato paste 150 and 4 g. Batch total 2,290 calories and 260 g of protein ÷ 6 servings = 382 calories and 43 g of protein per serving.
4. Lentil & Vegetable Soup
Serves 4 · Cook time: 6 hours on LOW · Per serving: 283 calories, 15 g protein.
Combine 3 cups of cooked lentils (or 1.5 cups dry, rinsed well), diced carrots, celery and onion, a can of chopped tomatoes, 4 cups of vegetable broth and 2 tablespoons of olive oil with cumin and garlic. Cook on LOW for 6 hours. This is the lightest main on the list and the cheapest — lentils cost very little and keep you full for hours. Our lentil soup calories guide has the full breakdown of canned vs homemade.
The maths: lentils 690 calories and 54 g of protein, vegetables 200 and 6 g, olive oil 240 and 0 g. Batch total 1,130 calories and 60 g of protein ÷ 4 servings = 283 calories and 15 g of protein per serving.
5. Light Chicken Tikka Masala
Serves 4 · Cook time: 5–6 hours on LOW · Per serving: 270 calories, 43 g protein.
Add 1 lb (450 g) of chicken breast, 1.5 cups of crushed tomatoes, one diced onion, garam masala, ginger, garlic and 1 teaspoon of oil. Cook on LOW for 5–6 hours, shred the chicken, then stir in 1 cup of nonfat Greek yogurt off the heat — stirring it in at the end stops it splitting. The yogurt replaces the cream of a restaurant tikka, which is why this version stays light. For the full restaurant comparison, see our tikka masala calories guide.
The maths: chicken 749 calories and 141 g of protein, tomatoes 120 and 6 g, Greek yogurt 130 and 22 g, onion, spices and oil 80 and 2 g. Batch total 1,079 calories and 171 g of protein ÷ 4 servings = 270 calories and 43 g of protein per serving.
6. BBQ Pulled Chicken
Serves 5 · Cook time: 5–6 hours on LOW · Per serving: 256 calories, 43 g protein.
Add 1.5 lb (680 g) of chicken breasts, 1 cup of low-sugar BBQ sauce, one sliced onion, a splash of apple cider vinegar, smoked paprika and garlic powder. Cook on LOW for 5–6 hours, then shred and toss in the sauce. Serve in lettuce cups or on a small wholemeal bun — the bun is not counted in the figures below. One honest line: the sauce is where the sugar hides, so check the label. A regular BBQ sauce can double the sugar of a low-sugar one.
The maths: chicken 1,122 calories and 211 g of protein, BBQ sauce 120 and 1 g, onion, vinegar and spices 40 and 1 g. Batch total 1,282 calories and 213 g of protein ÷ 5 servings = 256 calories and 43 g of protein per serving.
7. Overnight Steel-Cut Oats with Apple & Cinnamon
Serves 4 · Cook time: 7–8 hours on LOW (overnight) · Per serving: 256 calories, 11 g protein.
Grease the pot lightly, then add 1.25 cups of dry steel-cut oats, 2 cups of skim milk, 1 diced apple, cinnamon, vanilla and a pinch of salt. Cook on LOW overnight for 7–8 hours and wake up to breakfast. This is the breakfast exception on the list: lighter on protein, but the oats are high in fibre, which keeps it filling. Stir in Greek yogurt or a scoop of protein powder if you want more protein.
The maths: oats 750 calories and 25 g of protein, skim milk 180 and 16 g, apple 95 and 1 g. Batch total 1,025 calories and 42 g of protein ÷ 4 servings = 256 calories and 11 g of protein per serving.

Crock Pot Safety & Quality Tips
- Fill the pot 1/2 to 2/3 full. Too empty and food overcooks; too full and it may not heat evenly.
- Do not lift the lid to peek — every peek lets heat escape and adds roughly 15–20 minutes to the cook time.
- Do not put frozen meat straight in. Thaw it first: a slow cooker heats too gently, so frozen meat spends too long at unsafe temperatures. This is standard food-safety guidance.
- Refrigerate leftovers within 2 hours of cooking.
- Most of these freeze well for meal prep — portion the chili, stew and pulled chicken into single-serving containers before freezing.
Pick two or three of these for the week, cook them on Sunday, and healthy dinners take care of themselves. If you want a full structured day around a slow cooker dinner, our 1800 calorie meal plan shows how a day of eating can fit together.
What is the healthiest thing to cook in a crock pot?
Lean protein with beans and vegetables — turkey chili, chicken and white bean chili, and lentil soup are the best examples. They are high in protein and fibre, need very little added fat, and keep you full for hours.
Are crock pot meals good for weight loss?
Yes, when portions are controlled. The meals in this post are 250 to 400 calories per serving with plenty of protein, which helps you stay full. The slow cooker itself does not make food low in calories — creamy sauces, cheese and fatty cuts are what push the numbers up.
How long can you leave food in a crock pot?
Most recipes are designed for 6 to 8 hours on LOW, and some stews cope with 10 hours. Once food is cooked, do not leave it sitting on the warm setting for more than 2 hours — refrigerate leftovers promptly.
Can you put frozen chicken in a crock pot?
No — thaw it first. A slow cooker heats too gently, so frozen meat spends too long at temperatures where bacteria can grow. Thaw chicken in the fridge overnight before it goes in the pot.
Do crock pot meals lose nutrients?
Some vitamin C and B vitamins break down in long cooking, but in soups and stews you eat the cooking liquid, so most of the nutrients stay in the meal. Minerals are barely affected, and slow cooking is one of the gentlest ways to cook vegetables.
